Fritsche, Kevin

Kevin Fritsche is a professor of nutritional immunology in the Division of Animal Sciences and he holds an adjunct appointment in the Department of Nutrition and Exercise Physiology. For most of his career his research program has been focused on better defining the influence that dietary fats have on the immune system and inflammation. More recently, he became involved in the MU Center for Botanical Interactions Studies. As such, his lab is investigating the immune-modulating impact of a variety of botanicals, including: soy, garlic, elderberry, and Sutherlandia, a traditional herbal from southern Africa.
